Bike Camp: Scotty Lake (April 2017)

On my bike trip to Scotty Lake, I cooked three meals: Sweet & Spicy Chicken, Camp Breakfast Pouch, and Beans & Sausage.  The recipes below are for cooking everything at the camp site.  On my trip, I did a bit of pre-cooking, watch these videos for details.

Sweet & Spicy Chicken

1          Chicken Breast

½         Potato

1  cup   Sauce/Marinade

¼ cup Pineapple Chunks

1 tbs.   Olive Oil

1          Jalapeno

Foil and non-stick spray

·         Cut chicken breast into strips.  Place in a gallon bag with ½ cup of marinade and seasonings.

·         Cut potato into small bits.  Place in a gallon bag with oil and seasonings and then shake.

·         Use a double layer of foil.  Coat the foil with nonstick spray and add potato.  Cook for around 15 minutes.

·         Carefully add chicken to foil packet and cook for another 15 to 25 minutes.

·         When ready to serve add pineapple and more sauce if desired.

3          Chicken sausages

½         Potato

2          Eggs

¼ cup Shredded cheese

1 tbs.   Olive Oil

¼ cup Mushrooms

Foil and non-stick spray

 

·         Cut potato into small pieces and coat with oil.  Add desired spices.

·         Use a double layer of foil.  Coat the foil with nonstick spray and then add potato.  Cook for 15 minutes.

·         Carefully add sausage and egg to foil pouch.  Cook for an additional 15 to 20 minutes.

·         When ready to serve, add shredded cheese.

 

Beans & Sausage

1 can    beans

2          Chicken sausages

3 pcs   Uncured Butchers Bacon

·         Cook bacon on grate over fire or pre-cook at home

·         Cook sausages on a stick over the fire.

·         Heat up beans on camp stove and add bacon

·         Enjoy
