Leftover Turkey Ideas

Unfortunately, I spent my Thanksgiving night at work, but lucky for me I came home the next morning to a mountain of leftover turkey. Truth is, I don’t actually care for turkey all that much. I really wish the tradition was ham. So, my challenge was to figure out how to use all the turkey. After rummaging through the fridge I came up with three dishes that also utilized other leftovers: Turkey Skillet, Turkey and Beans, and Turkey Salad.

Turkey Skillet A couple tricks I learned years ago is you can add an egg to almost anything…also bacon. Throw in some leftover tots and you have yourself a meal. A splash of Tabasco can really add some flavor too.

Turkey and Beans

I’ll admit this may be an acquired taste, but it is simple and makes a hardy high protein meal. Just mix some turkey and bacon in with beans.

Turkey Salad

Although I do prefer ham salad, this is pretty good. It also keeps the turkey from drying out. Grab your favorite spices and season the turkey. Next through the turkey and a couple hard boiled eggs into a grinder then mix in mayonnaise until it becomes a spreadable mix.
